8 Tips for an Awesome Ultimate Taste Test 4.0: The Beer Pairing Experience

We are excited about one of the biggest events of Our Awesome Planet (OAP) and MASED Foundation, in partnership with San Miguel Lifestyle BrewsThe Ultimate Taste Test 4.0! About 1,000+ foodies will taste and critique food offerings from 52 suppliers showcasing the latest foodie delights in Manila. 🙂

In November 2009’s Ultimate Taste Test 3.0 (with 30 suppliers), some foodies started eating like it was a buffet, so even with just the first few food suppliers, they were stuffed already. Once you feel stuffed, the rest of the taste test event would most probably be ruined for you — we don’t want that to happen.

The key is to pace your tummy, carefully choose which supplier to test based on your interest, and accept that it would be impossible for you to taste all the offerings of the 52 suppliers.

To help you along, here are:

8 Tips for an Awesome Ultimate Taste Test 4.0 – The San Miguel Lifestyle Brews Beer Pairing Experience…

1. Smooth Registration Tips

Upon your arrival, kindly approach the registration booth and give your registered name/s. Should you have last-minute changes in your schedule and find yourself unable to attend the event, you may assign your slot to another person. Your replacement may just give your registered name at the registration area.

We tried our best to accommodate as many people as possible. Also, we had an email problem with gmail where almost all of the emails we received on a particular day were lost. We had a hard time confirming each and every deposit.

For smooth registration, if you received a confirmation message, please present it at the registration desk. If you have a deposit slip, bring it with you and specify the BPI branch where you made deposit — the branch is very important to track your registration fee.

2. Rating Sheet Tips

The Ultimate Taste Test aims to discover “the next foodie stars” with the help of 1,000+ foodies. 🙂 All the suppliers will provide FREE taste test (bite-size portions) of their products; in exchange, you need to provide your honest-to-goodness, brutal ratings and comments.

The rating will be done anonymously, and that’s the power of the Ultimate Taste Test. Each supplier or food item will be rated on a scale of 1 to 5:

1- Horrible
2- It is OK.
3- We had a good time.
4- I love it!
5- Awesome! I Would Recommend It!

We learned through the past Taste Test events that if a supplier gets an average rating of 3.3 and above, that supplier will most likely be raved about by foodies. We will feature those suppliers that hit at least a 3.3 rating in OAP.

To make the critique complete, please put a one-phrase/sentence comment or constructive feedback that we might also publish in the blog.

3. Beer Pairing Strategies

If you paid P230, you are entitled to a bottle of one of the San Miguel Lifestyle Brews, which include the San Miguel Premium All-MaltSan Miguel Super Dry, and Cerveza Negra. (These are the San Miguel Brands that are good for pairing with food.) 🙂

As a general pairing rule:
San Miguel Premium All-Malt goes very well with Poultry and Seafood;
San Miguel Super Dry goes well with Beef and Pork dishes; and
Cerveza Negra is better matched with Sweet dishes, like desserts.

Of course, you are free to mix and match according to your liking. During the taste test, you’ll have an opportunity to experiment with the right beer match. My favorite is San Miguel Premium All-Malt, especially if it is served Beer Below Zerostyle. 🙂

There will be taste test portions of the San Miguel Lifestyle Brews, and you can buy a
nother bottle for P50.

4. Appetizer Tasting Strategies

We arranged the suppliers in the NBC tent in such a way that you will see the Appetizers first when you enter. Chile Vitas is launching — for the very first time — its signature line of Gourmet Filipino sauces. Sunrise Buckets Poppers is also interesting to try first. For those who are looking for something healthy, Happy Green is a good choice. The Fruit Jam is a past winner from the Ultimate Taste Test 3.0 event. 🙂 

Tip: Don’t stuff yourself too much with appetizers.

Dulcelin Gourmet is an Ultimate Taste Test favorite and a topnotcher in UTT 1.0 and UTT 3.0. Pepitas Kitchen Lechon will be launching their line of gourmet lechon in UTT 4.0. 🙂 Marikina’s Qasa 61 is also worth checking out.

Tip: The key is to look at the main dish, see what is appetizing to your eyes, and try that first.

6. Drinking Strategies

Don’t drink a lot because the drinks can make you feel full faster. Personally, I would stick to the Alkaline water and then reserve coffee and Holly’s milk for dessert. We have sodas by Sodastream, but drink it moderately. Make sure you get to taste Jeren’s Kefir drinks – a must-try!

  1. Yes! We made it this time! Can hardly wait for it!
    But 1,531 tasters booked for an event originally planned for 1,000? Won’t there be an inevitable shortage of portions of all items for everyone – considering how some Pinoys do their “tasting” ala eat-all-you-can smorgasbord style with lots of leftovers on their plates? Heard such stories from the previous UTT events – nagkakaubusan daw ng appetizers and main dishes so a lot of participants had to make do with just the dessert spread. I hope and pray peeps will be more considerate of others this time around. It would be a shame to be stressed out just to get a decent portion to evaluate fairly. Just thinking out loud, folks.

  2. Thanks Ted, let's see how it goes tomorrow. I'm optimistic that people would be more considerate about going around tasting the food from 52 suppliers. It is a much bigger venue that would accommodate 2,000 people. We decided not to put in sit-in tables so that people really stand cocktail style and encourage people to go around.
    Let's see how it goes. This is one of our biggest event from close to 500 last November to 1,500… let's see. In any case, I'm excited!

  3. Last Wednesday. There was an email glitch and we were not getting the confirmation emails… we just learned when we looked at and counted the deposits… The venue can accommodate it since it is one of the biggest in the Metro for events like this. 
    we are more concerned about the food but we already asked the suppliers to add some more food. In any case, it would be fun to meet people and fellow foodies!

  7. Mamaya na ito, excited na ako! haha I hope pwede pa nga humabol ng additional P30 for the 1st bottle upon registration later as mentioned in the original UTT post. Hindi pa kasi na-set yung price when I paid.

Methinks it will greatly help if it will be specifically announced just before the tasting proper that all the foodies are only supposed to get portions of the food items for tasting, not to satiate their hunger or, worse, give in to the “takaw-tingin” mentality of some. That each taster is supposed to give way for everybody to have the chance to evaluate all the products fair and square which is the main objective of the event. I’m sure that after hearing this, common courtesy and decency shall prevail among all the participants who are generally responsible and mature individuals anyway – or so I hope. Just my two cents’ worth.

Try your best to register and pay early – slots are really up for grabs fast and there are a LOT of eager takers. I had to learn that the hard way with the first 3 UTT events.

  11. Hi Anton! Dulcellin again for me tops this one and Pepetons too was a good surprise :). I came from the Tent and there were just too many people. I hope the next one can be a bit more organized. Some concessionaires need to work on being more efficient. Lines just got too long to enjoy the food. Garbage also was everywhere. Just my two cents :). But all in all a success as you had a huge turnout. Congrats 🙂

  12. ‘Twas a resounding success! Indeed the biggest and boldest UTT event yet! Congratulations, Anton!
    In terms of attendance, I dare say there were easily more than 2,000 attendees milling all over the place. Methinks a lot of freeloading gatecrashers were able to get in. Or peeps with paid reservations brought along unregistered companions who were able to pass through the quite lax security. I should know – while waiting in line for our turn at the registration table, my wife and I were intermittently entering the main hall to greet and touch base with familiar faces with nobody bothering to check if we are authorized to pass through. Two words: security breach. Add two more: logistics nightmare. Definitely one major aspect to look into during the postmortem evaluation.
    At any rate, we had a great time hopping from one sampling table to another. You were right, Anton – hindi nga kakayanin ng powers namin ang matikman lahat ng products courtesy of the 52 or so suppliers. Although 5 or so tables have already run out of tasting samples even before we got to them, there were others with either long queues or products which didn’t tickle my fancy which I had to pass up. And still I felt so full despite getting strictly small portions for tasting. Good thing the comely San Mig promo girls were constantly approaching our cocktails table and offering me portions of their world-class lifestyle brews – I must have easily drank the equivalent of four bottles or so. Indeed all this complimentary beer pairing made it easier on the tummy to make room for more good eats to evaluate.
    Already excited to join UTT 5.0 – definitely as a supplier this time. Can. Hardly. Wait.

    Thanks so much for the support and the after-event chat 🙂 We will do a "pre-race kit" pickup system so that you just need to show a ticket/something to enter into the event. That should fix the registration queues and eliminating the security breach. 
    One thing we need to fix also are the lines for the stalls, some foodies decided to skip a stall because the lines were long. Any ideas on how to fix it would be helpful. Maybe more servers from the suppliers?

    We were there last night and reading through some of the posts, security and crowd management should be given importance on the UTT 5.0. The lines were really long too, but understandable with the huge turnout for the event. And you are most def right, it was quite impossible to sample everything. A few samples did make their mark on us (Qasa is really good!, and I bought a lot of Fruit Jam hehe!), as well as some overly sweet desserts.
    Still, a big CONGRATULATIONS to you, Ivan and Manila Boy for this wonderful event. Not only you gave a lot of suppliers the chance to road test their heavenly creations, but also gave the city folks more reasons to live an awesome life – by way of the ultimate taste test.
    Looking forward to the next event as things get better and bigger for UTT 5.0.

  15. Hi Anton, first off, congrats on the success of the event. Sayang sana pala I printed your reply here hehe. The one handling our line at the registration said I’d have to buy the beer inside at P50. I didn’t want to hold up the line so I just let it go, ok lang naman 🙂 I agree with the post that logistics would have to be improved next time. A far cry from UTT 3.0 but then again, the number of attendees multiplied at least threefold. Pero at least it wasn’t a nightmare like elections haha.
    As for the long queue at some food suppliers’ tables like Sakae Sushi and Manila Q, one factor is they’re the ones nearest the entrance. So people who just arrived naturally line up there first. And it seemed to me that the suppliers couldn’t prepare the samplers fast enough for the line to move quickly. Crepes and Creme is another story altogether, since they can’t prepare the crepes beforehand, and I’m sure for those who waited patiently (not us hehe), it was worth it. Ang laki ba naman ng crepe eh 😛

  16. Yes additional servers as well as a separate line per food item would help ease the long queues. Also, the servers have to be knowledgeable on their products – some foodies were understandably holding up the line as they took time asking about the products, and it was quite frustrating when the server couldn’t reply to simple inquiries such as standard retail size, packaging, among others. My wife Joyce and I made it a point to take into consideration the price points vis a vis the taste, texture and visual appeal of the food in order to give a truly objective evaluation of the products’ overall value for money. Several times we had to be referred by the staff to the business owner or whoever in the know who oftentimes were busy chatting with others so again we had to wait for our turn just to get basic information not indicated on their handouts.
    Some suppliers like Crepes & Cream (who very generously gave out a standard whole crepe cone with filling per taster) were making their samples on the spot making the queue excruciatingly long and slow. After standing in line for 10 minutes for one of them filled crepes, my 9-year-old foodie son coerced us to just bail out after seeing some people dumping the crepe wrapper after merely partaking of the filling – apparently not worth the long wait and inarguably defeating their purpose. Good thing we got to help ourselves to the far superior FIC Pistachio Ice Cream Sansrival and Boracay’s Frozen Kefir Swirls nearby.
    Putting into consideration these factors will considerably help streamline the queuing process, more so with the much anticipated UTT 5.0 expected to draw in an even bigger turnout (though hopefully barring them ubiquitous gatecrashers).

    Congratulations on your event! Naturally there would be some hang-ups given the sheer size of UTT and number of people who came, but it was a resounding success nonetheless.
    Some feedback which may help for future events (that for sure will attract more fans!):
    – improved registration process: perhaps look into online event registration websites, like RegOnline.com; they provide confirmation mailers and handle registration fee processing.. it took us around 45 minutes to get into the venue just waiting in line
    – beefed up security: people could walk in and out as they pleased
    – more trash cans: perhaps one large trash can per booth; or one trash can every 10-15 square meters
    – more cocktail tables! it was difficult to eat some of the foods just walking around/standing
    – instead of a form/scorecard which everyone brings around, perhaps the ratings/comments could happen at the food booth itself?
    – improved layout of the booths: it was hard to move around especially in places where the lines were so long
    – more water/drinks suppliers, or at least more water dispensers scattered around the venue
    As always, the food was fantastic! Favorites of the night:
    – Dulcelin Pulled Pork Mac & Cheese – so good!
    – Swirls Frozen Kefir – better than frozen yogurt!
    – Goodles 7-layer Lasagna
    – Just Say Oui Chocolate Molten Cake
    – AFTERS Desserts Cheese Brownies

  19. This latest version of UTT is proof that big is not necessarily good. Too many people were accomodated when the event itself can only support like half the number who showed up. The food was hurriedly prepared so you cant judge the true quality of the main course stalls, the beer was not cold at all so how can you judge beer pairing with warm undrinkable beer.
    Sorry Anton, lots of potential but next time maybe you should leave the event organizing to a professional team. Hope the next one will improve cuz its still a good event regardless.

  20. The event was a total waste of money for me. There were just too many people, which leads me to think that the organizers deprived the participants of an enjoyable experience just so they can sell more tickets. I had maybe just one cookie before I gave up. A person can’t eat, more so enjoy food, in that chaos.

  21. be warned: this event is not for real foodies!
    it was a money-making thing, pure and simple. an amateur one at that.
    too many people were allowed inside; line outside was unbearably long;
    lines inside were worse. some of the stalls ran out of food.
    the worst part: the food was average and the beer was warm.
    to the OAP team, this event was off-equity.
    i was very disappointed and will not recommend it to friends.

  23. personally, i think the event was not that successful. from what I know and read from previous UTT events, the main goal is to critic the food to help food suppliers get feedback on their creations and improve on it if needed. unfortunately, the huge crowd was too much for the purpose of the event. not to mention, registration was really stressful. i did not find my name from the alphabetical list. i did not attempt to line up the ‘special concerns’ area because it was way too long. i ended up using my friend’s name who had to go back to the office for work. when he was about to return to the tent, we were about to leave, so we never got to use the other ticket.
    we didn’t get to taste the raved booths simply because we were so tired standing in line and walking around for at least 2 hours, starting from the registration. it was difficult to concentrate on rating the food.
    i really hope the next UTT will focus again on the main goal.

  24. Hi Anton! Congrats on the event, I brought my college along and they enjoyed it, especially the boys. Haha. My mom and I were so excited to see the Batanes people too! Just a suggestion for UTT 6.0, how about sit down taste test na lang? We had to do so many things at the same time kasi (line up, balance the food, eat, walk, avoid other people walking, make chika, think of where to to line up next, find a trash can, listen to Ivan or Comedy Cartel) and this made it really hard to score the suppliers — which I think was the primary objective of UTT in the first place 🙂
    Maybe having big tables instead of stalls, where each person could sit down, have all samples in one plate (or at least one big sampler platter in the middle of the table that table mates can share) and a booklet with write ups on each supplier as well as the scorecard. That way, all dishes could be tasted, the number of participants is strictly at 1,000, suppliers would find it easier to portion the food, and all suppliers could be properly rated without the participants feeling tired or frustrated 🙂 People could make friends pa with their table mates! 🙂 The trade off here is that people can’t interact with the suppliers lang. But maybe each supplier could be given a short time to talk in front to give a brief background on their business.
    Nonetheless I had no regrets about joining UTT 5.0, and I’ll definitely attend the next one! Thanks for making our stomachs happy Anton! More power to OAP! 🙂

  27. Now that I think about it, the event seemed rather hectic. Organized chaos I believe is what I said 🙂 Not only in the design of the stalls but rather the amount of people trying to get everything done in such a short amount of time. If nothing else but the event was 2 hours longer I think things would go much smoother. With more food providers I think its necessary to provide more time for everything to be consumed by the tasters and thought about rather than having them rush to each stall one after the other to try everything or atleast get in line for everything. Also the limited time presents pressure on the food providers to serve that much food in so little time. More time, people will go at a slower pace, talk a bit, walk a bit, rest etc, maybe come back. Then you could also have people actually stop for the comedy shows or other presentations instead of having to interrupt their eating. (Filipino’s will not stop for anything if the food is free, that was proven that night 🙂 lol
    Anyway I hope eventually this event can become a whole day event open to the general public or atleast longer so it can be experienced fully and everything taken in.
    Lots of luck to the next event! IMO use an online event planning service or something that will let people post that they have paid and on what date and not rely on email, so atleast something thats easy to organize and maybe even print tickets from or what not.
