22. ALLIUM
ALLIUM is the restaurant reincarnation in Makati of our favorite Studio Kitchen in Alabang, by Filipino-American Chef Mark Tan. Its name is inspired by the genus of plants that include onions, garlics, chives, and leeks and responsible for the flavors we enjoy in our food.
We tried the degustation sampler and grilled meat selections prepared by Chef Mark during one of our Mercato partners’ meeting. His specialty is contemporary American cooking using fresh local ingredients and good quality imported meats.

23. PERFECT PINT
My Perfect Pint Combination: Lengua with Crispy Garlic x Craftpoint Liberation Pale Ale.
THE PERFECT PINT is a gastropub by the Tempongko brothers. It showcases Filipino Food by Chef Gene Gonzalez, paired with the best of Craft Beers in the Philippines.
It’s inspired by research on the ideal environment to drink a pint of beer, which concluded that:
“The maximum satisfaction is found to occur at an ambient temperature of 17.6 degrees Celsius, with just over two days until you are due back in work, between three and four people with you, all in good spirits, with quiet music and widely available food and snacks.” (via Mindlab Intelligent Insights)
The Perfect Pint envisions setting the standard in providing that experience to every customer in the Philippines.

LULU is a casual fine dining restaurant with a tandem hip bar called HOOCH. The name Lulu is a carryover from the former Rockwell restaurant of the same name, while Hooch is an alcohol drink term used during the prohibition era.

MENDOKORO RAMENBA is the “serious ramen” reincarnation of Ramen Yushoken in Makati by Elbert Cuenca and Ryan Cruz. It serves strictly ramen limited to 80-100 bowls only for dine-in during lunch or dinner inspired by authentic ramen houses in Japan.

26. MARMALADE KITCHEN
MARMALADE KITCHEN is a comfort food resto and kitchen studio by Chef Aileen Anastacio of Goodies & Sweets fame. I like the simple, home-cooked goodness of the food prepared by the chef.
The name of the resto is inspired by Chef Aileen’s love for breakfast, brunch food and marmalade. She loves the color orange so you can see different shades and forms of it throughout the store.
It’s a cafe with a kitchen studio — a place where people can cook, learn and eat, something the chef loves doing until this day. You can have a kids’ birthday party or a private cooking session with the chef in the studio.

NIU is a high-end buffet of the Vikings group, located on the topmost floor of SM Aura Premier in Taguig. The name literally means “nine” in the old Norse language and refers to the “Cloud 9” experience the buffet provides. Coincidentally, the buffet also has 9 stations with over 300+ dishes.

ERIC KAYSER is an authentic French Artisan Boulangerie in Manila, which is a licensed partnership between Eric Kayser and his local partners, Jacky Ang, Kelvin Gaisano, and Chris Tiu. Eric Kayser has 96 stores in 17 countries, with the Philippines as the latest expansion.
You should notice the difference in the taste and texture of their bread because of their signature Natural Liquid Leaven, which sets it apart from the yeast-based breads in Manila. Eric Kayser demanded to have a commissary from the start and sent his trained French bakers in Manila to ensure the top quality of the breads, following the tradition of using a long natural fermentation process, slow kneading, and small-scale production.
Gone are the days of flown-in frozen French breads. The key is to baking fresh daily using top quality ingredients and following a strict artisan production process. Once you’ve tasted the Eric Kayser difference, it will be very hard to appreciate other French breads in town.
