Madrid Fusion Manila is one of the most influential culinary events where world-class chefs showcase their philosophy, techniques, and latest innovations.
Madrid Fusion Manila a festival of fine Spanish and Filipino food kicked off with Tapas Night at the Green Sun Hotel Makati, where seven of the Philippines’ top Spanish Chef prepared innovative and exclusive dishes at this invitation-only event.
Tapas Night showcased a selection of unconventional and familiar tapas representing the different regions of Spain prepared by seven of the Philippines’ best Spanish Chefs including Chef José Luis “Chele” Gonzalez (VASK Gallery), Chef Amado Garcia Fernandez (Pablo Bistro), Chef Carlos Garcia (The Black Pig), Chef Nicolas Diaz (Barcino), Chef Pablo López (Donosti), Chef Iván Saiz (Arrozeria) and Chef Juan Carlos de Terry (Terry´s Selection).

There were three sides at the event hall representing the three regions of Spain, namely North, East, and Cental and South where a variety of tapas, cheeses, main courses, desserts and wine was served.
The event was hosted by the Embassy of Spain.
The chef’s showed us how tapas can have the perfect mixture of modernity and tradition.
The North Region offered yummy dishes by Chef Amado (Pablo Bistro), Chef Chele (Vask Gallery) and Chef Pablo (Donosti).
Mini Wagyu burger con mousse de foie, cebolla, caramelizada y mayonesa de trufa (Mini wage burger with foie mousse, caramelized onions and truffle mayonnaise) by Chef Chele
Croquetas de txangurro by Chef Pablo
Torto de carrillera de cerdo Iberico con patata en dos texturas (Iberian Pork Cheek Corn Patties with Potatoes in Two Textures) By Chef Amado.
The Central and South regions were represented by Chef Juan Carlos (Terry’s Selection), Chef Carlos (Black Pig), and Chef Justo (Txanton)
Guests line up at Spain’s most coveted ham Jamon Iberico by Chef Juan Carlos (Terry’s Selection).
The ham comes from Pata Negra an indigenous black-foot pig the grazes on Spain’s Dehesa.
Rosy red paper-thin slices with delicate marblings of fat.
Creacion extremena de cerdo coronada con crujiente de morros (A scrumptious Extremadura callos- creation crowned with a crspy pork delight) by Chef Carlos
Tarrina de Jamon serrano (Jamon Serrano Pate) by Chef Justo
The East Region prepared by Chef Nicolás (Barcino), Chef Francisco (Rambla y las Flores) and Chef Iván (Arrozeria).It also hosts to a wide display of cheeses, Spanish charcuterie, cured meats and paella.
Sushie de jamon serrano con tomaye y mahonesa de soja (Jamon serrano sushi with tomato and sya mayonnaise) by Chef Nicolás .
Arroz de cerdo adobado con boletus (Marinated pork rice with boletus) by Chef Ivan.
Most Filipinos prefer their paella wet and soft, so I really enjoyed the meloso version, which is just a bit saucy and full of flavor.
Baguette de Salmon queso mancheg y aciete de trufa (Salmon, manchego & truffle oil air baguettes) by Chef Francisco.
Selections of the Spain’s wines, cava and other liquor.
Tapas night felt like eating one’s way through a region and tasting the different tapas and wines of Spain. The perfect blending of modern and traditional Spanish cuisine exhibited during Tapas Night is just a preview of the upcoming Madrid Fusion Manila 2016 on April 7- 9.

The Tapas night finished already last Saturday which is a preview to Madrid Fusion Manila this coming April 7-9. Sorry for that, I corrrected the grammar already.
