MILA’S: Arguably The Best Sisig in Pampanga?!

Ranked as one of the best Carenderias in Angeles City, MILA’s has been a household name for many Kapampangans since 1989. They were originally famous for their Tokwa’t Baboy, but now they’re more known for their unbelievably addicting crispy Sisig!

Sisig is a Kapampangan staple consisting of grilled, diced pork cheeks, ears, liver, onions, and even pig brain. This beloved drinking food is often credited to Lucia “Aling Lucing” Cunanan of Angeles City, who made the best of the discarded ingredients from Clark Air Base.

Due to the simplicity of the preparation and affordability of the ingredients, Sisig grew in popularity and more establishments, like MILA’S, began offering variants.

Mila’s is spacious with plenty of indoor and outdoor seating. Due to its non-intimidating, casual ambiance, it’s a popular place for families to dine and tends to get crowded on weekends and holidays.  

This humble eatery began as a sari-sari store owned by Milagros and Reuben Gomez. Because they sold cold drinks, many of its customers would request some kind of Pulutan, or finger food, to pair with their beverages. When they added their Tokwa’t Baboy and Sisig to the mix, the rest was history!

Tokwa’t Baboy (P200). Golden fried Tofu with Pig Ears in Home-made Soy Sauce with Celery and Tomato.

This is the dish that started it all. When a family member who had previously worked in restaurants at Hawaii and Hong Kong introduced her Tofu and Soy Sauce dish, Reuben Gomez decided to give it a try. After many attempts to make it more palatable to Filipinos, he struck the jackpot and created the delicious Tokwa’t Baboy. 

The tofu is fried perfectly, crispy on the outside and soft in the center. The richness of the pig ears is balanced with the saltiness of home-made soy sauce and the freshness of celery.  A fantastic dish!

Sizzling Sisig (P200). Deep Fried Pork Cheek with Onions and Chili.

What sets Mila’s Sisig apart from others is their treatment of the most popular Kapampangan speciality. The pig’s head is boiled, fried until golden, diced, then seasoned.

Mila’s take on the classic Sisig, which has a fattier, more gelatinous consistency, is refreshing and a little later on the palate. Highly recommended!

Fun fact: The word Sisig means to “snack on something sour”. The term was generally used to describe a pregnant woman’s hunger cravings for sour food. According to Chef Claude Tayag of Bale Dutung, the best Sisigs always have a good balance of sour, salty, and savory. If there is no sourness there, then it’s not a proper Sisig.

BBQ Tocino (P200). Skewered  and grilled House made Tocino

Tocino, pork meat cured with sugar, is a beloved Filipino breakfast favorite. Mila’s found a new way of enjoying it by grilling it!

The charring caramelizes the outside and at the same time infuses a rich smoky flavor–enjoy this with a side of Sukang Pinakurat, or spiced vinegar.

Pacô Salad (P150). Fresh baby Fern with tomatoes and onions, topped with salted egg.

Pacô (fern), eaten in many SE Asian Countries, is considered a delicacy in the Philipines.  The Pacô salad at Mila’s isn’t bad. The ferns were fresh and there was just the right amount of salted egg.

Add the vinegar dressing for a dash of tanginess!

Chicharron Bulaklak (P200). Fried Pork Intestine 

Chicharong Bulaklak or Flower Chicharrón is a popular beer food in the Philippines. Mila’s version isn’t as oily as others, but did lack in flavor. We like our finger food salty.

Mila’s has served great food in Angeles for almost 30 years, and is quite symbolic of the Kapampangan resilience through its unchanged recipes and interiors. Even if all the dishes are commonly known, the Mila’s way of preparing them definitely surprised us! 

With a budget of 300 per head, order the Pacô Salad, then the Tokwa’t Baboy and the Sizzling Sisig for your main dishes.

  1. we ate there yesterday I think their paco salad is awesome and also the bbq but tokwa’t baboy and sisig its all ordinary the chicharon bulaklak is so so
