Kam’s Roast Goose is a Cantonese style BBQ restaurant in the heart of Wan Chai Hong Kong. The establishment has won numerous awards for excellence and quality and was awarded its first Michelin Star in 2014.

The busy restaurant sells around 100 geese per day that are shipped in daily from China and prepared in-house each morning.

Kam’s only uses Black Headed Geese which are 2.8-2.9 kilos each.  The relatively small geese are leaner and much tastier when compared to their more common counterparts.

The key to Kam’s success is that the geese are prepared using the freshest of ingredients and prepared with a tried-and-true recipe that has been handed down for generations.

Ask anybody in Hong Kong where to find the best goose and they will tell you Kam’s is the place to go.

Kams7Hardy Kam is the founder of Kam’s Roast Goose and 3rd generation restaurateur of the Kam Family. His grandfather Mr. Kam Shui Fai and father, Mr. Kam Kinsen Kwan founded the internationally acclaimed Yung Kee Restaurant in Central Hong Kong.

Hardy branched out to open Kam’s Roast Goose in 2014 and was awarded his first Michelin Star soon after, only having been operational for 4 months.

Hardy claims his success stems from running a small-scale operation and preserving the legacy that his family started. Quality ingredients and traditional Cantonese techniques, along with his hands on approach ensure customers have a pleasant experience and a delicious meal.

What To ExpectKams4The first thing you’ll notice is the impressive display window that showcases the day’s produce.

Kams8The restaurant itself is not very large and can accommodate small groups of people at a time.

We were told there is a constant flow of people and if you go during rush hours, expect to wait.

Kams6Each Kam’s restaurant has a mural depicting the Kam family and is a reminder to Hardy about his family’s legacy.

Hardy’s RecommendationsKams18Goose isn’t the only thing on their menu.  The restaurant serves up a variety of roast meats, BBQ, and Cantonese specialties.

Hardy took the privilege of ordering us some of his top sellers.

Kams11Century Eggs w/ Pickled Ginger (HKD13.00 / ₱83.82) – These are probably the best century eggs we’ve ever tried.

Century eggs have a salty and slightly sulfuric taste to them with a silky smooth yolk and jelly-like texture. While common in Chinese cooking, century eggs are an acquired taste that may not resonate at first with a western palate.

What makes these special is the house-made pickled ginger which when eaten with the egg, adds an almost floral like taste that was quite pleasant. Must try!

Kams10Crispy Roast Pork (HKD85.00 / ₱547.98)Crispy and crunchy on the outside, soft and packed full of flavor on the inside.

This could rival some of the best lechon back in the Philippines. The simplicity of this dish is what makes it so delicious.

Kams15BBQ Pork Belly Fatty Char Siu (HKD155.00 / ₱999.26) –

This Pork Belly Char Siu recipe was Hardy’s father’s invention who found that the fattier pork belly was richer and heavier and paired perfectly with wine and beer.

Surprisingly tender and full of flavor, the fat of the pork belly mellows out the sweetness of the Char Siu sauce and added a slightly more salty and smokey flavor which we enjoyed.

Kams16Roast Goose Lower 1/4 (HKD145.00 / ₱934.78) – The pièces de résistance! Kam’s Roast goose is definitely the best we’ve tried in HK.

What sets Kam’s Roast goose apart is the quality of the product combined with traditional cooking techniques that are executed flawlessly.

The goose is crispy on the outside with plump and juicy meat on the inside. We loved everything about this dish, the spices and especially the special sauce that is poured on top right before serving.

Kams17Kam’s offers a special house sauce for the goose is made from secret spices bean paste.  The sauce perfectly complements the richness of the goose and adds another dimension of flavor.

Kams9Char Siu (HKD65.00 / ₱419.05) – a traditional Cantonese style Char Siu that’s sweet, smoky and tender.

Kam’s version is fantastic!

The tenderloin was meaty and pairs well with rice. Try dipping the Char Siu in Chinese hot mustard or their house-made plum sauce.

Final ThoughtsKams2Kam’s Roast Goose carries on a family tradition that has earned Hardy and his crew numerous culinary awards and prestige. Not only is the food phenomenal, Kam’s Roast Goose is one of the best restaurants in Hong Kong that will keep locals and visitors flocking in for a delicious meal for years to come.

If you ever find yourself in Hong Kong and you love Cantonese BBQ, Kam’s should be one of the first places you try.

Order the Century Eggs to start and the Roast Goose of course. In the mood for pork? Go for the Pork Belly Char Siu.

Congratulations to Hardy Kam and his very talented staff at Kam’s Roast Goose!
