PORKETTA is a 6-hour brick oven, slow-roasted pork belly. Think about it as a boneless pork belly lechon with crispy skin and lots of herbs and spices.
PORKETTA MAN is a secret Porketta-on-the-go business by Ram Jorge that is now making waves in the lechon-loving foodie community in Manila. Thanks to Michi Calica for giving me the tip on this and for Chef Sau for raving about it and sending me a sampler. 🙂
Check out Porketta Man…
The Porketta comes wrapped in a nice white paper packaging with rope and the Porketta Man logo.
It is best enjoyed hot and with crunchy skin, so it’s recommended to reheat it before serving.
The packaging comes with reheating instructions as follows:
1. Preheat oven to 250 degrees Celsius (or 482F)
2. Place Porchetta uncovered near the top heating element
3. Heat until skin becomes crunchy (be careful of burning), usually takes 9-10 minutesÂ
I like the roasted texture of the belly, with flavorful herbs and spices in the middle.Â
Admittedly, it’s quite hard to slice it. You need a very sharp knife if you want to cut across the belly, like how you would serve ham. It would be nice if it came with slicing instructions.Â
It comes with a nice green salsa, which resembles a chimichurri. The porketta is already good on its own…the salsa is just pampagana.
Love the layers of crunchy skin, belly fat, soft strands of meat, and the well roasted inside with herbs. It’s good to serve it sandwich style or with hot fried rice. 🙂
We love it! This is sure to be Manila’s hottest food gift and potluck item this Christmas! But because they’re a boutique home-based business, we recommend ordering as early as you can for the Holiday Season.
Congrats to the people behind Porketta Man!

P.S. I do hope they come up with a stuffed Porketta version.
OMG, this is a bud drooling recipe. At first glance, I am seeing a cinnamon, thought it was a pastry :).
