If you’re looking for great food around Dumaguete City, BLUE at Atmosphere Resorts is exactly where it’s at. Located at the heart of Dauin, Negros Oriental, Blue’s claim to fame are their hearty breakfast buffets, all day dining and healthy living options, casual fine dining signature dishes, and sweet treats by German-Filipino Chef, Denver Wickenhauser.

With the best eco-luxury resort around as its home, Blue’s approach to food is wholesome, flexible, and sustainable—with some restaurant staples produced not more than 2km away!

HOW TO GET THERE

From Manila, we traveled by plane to Dumaguete in one hour and 20 minutes via Philippine Airlines, whose planes fly to the city twice daily–8.40am and 1.20pm. A one-way ticket from Manila to Dumaguete is usually around Php 3,000. 

Travel tip: We booked our flights with Skiddoo, which offered us a cheap and easy way to book our flights online. That’s right. The fastest growing online travel agency out of Australia is now in the Philippines! It’s the cheapest place for you to compare and book airfare.

The restaurant is mainly al fresco dining, but guests can request that food be delivered straight to their rooms or cooked at their accommodation kitchens!

The Blue philosophy is about pampering yourself, but also being mindful about the environmental and social impacts of it. Atmosphere makes it their responsibility to source their ingredients locally; thus, supporting the resident farmers and fishermen.

Herbs are grown in Valencia, while the vegetables and fruit are produced just around Dumaguete. All local fish is caught right along the shores of Dauin.

The breakfast buffet is P750 per head and includes an a la carte menu.

Cheeses in the breakfast spread are made with goat’s milk produced 2km from the resort. Not only does this decrease travel miles, but buying close to home develops long-term, sustainable relationships with the resort and community.

Make sure to check the specials board every breakfast, lunch, or dinner. Specials are changed weekly.

Egg’s Benedict BHT (Special). Poached Egg on an English Muffin with bacon, hollandaise sauce, and grilled tomato.

Best enjoyed hot, the gooey poached tastes even more comforting with the creamy hollandaise sauce.

Nutella French Toast (Special). Toast with Nutella and Infused Egg Mixture.

Sweet specials are also available for kids or kids at heart!

Breakfast is served starting 6AM and comes with brewed coffee, hot chocolate, tea, and other fresh juices.

Items on the a la carte menu can be ordered as many times as needed. By allowing customers to customize their breakfast, this prevents food waste.

Filipino Breakfast (International Breakfast Section). Two eggs (any style), garlic or plain rice, atchara, dipping sauce, and your choice of bangus, longanisa, tocino, tapa, or corned beef.

If you’re extra hungry, get Filipino Breakfast. It has the most choices and is one of the heartiest breakfast items on the menu.

American Breakfast (International Breakfasts Section). Two eggs any style, hash browns, bacon & grilled tomatoes.

For something light and classic, you can get the comforting American Breakfast with a side of freshly brewed coffee.

Potato Roesti & Eggs (Healthy Living Section)

The healthy options on the breakfast menu are very light and rich in both protein and fiber. There are some really great vegetarian options available as well.

Ask for the Potato Roesti & Eggs, Egg Mozzarella & Tomato Flatbread, and “Greek Style” Poached Eggs to start your day guilt-free!

 

LUNCH (All Day Dining & Healthy Living)

At lunch, you have the choice of the All Day Dining or the Healthy Living Menu. Items on the All Day Dining Menu are marked with a V for vegetarian.

Watermelon & Feta Salad (P330). Fresh mint and mesclun greens.

A salad with sweet, summer fruit is a refreshing way to whet the appetite.

Pinoy’s Pride (P700). Catch of the day” steamed fish fillet in coconut milk with shrimp, black mussels & moringa leaves, topped with Asian vegetables, mango and chicaron, served with plain or garlic rice.

Fall in love with the comforting blend of silky coconut milk, freshly caught seafood, and a hint of tanginess from local mangoes.

The mackerel fillet tastes clean with no hint of unpleasant flavors of the ocean—making this a suitable meal for people who claim to hate fish.

Most of fish is usually bought from fishermen at the shore directly in front of the resort. Can it get any fresher?

Malaysian Mee Goreng with Canton Noodles (P790). Famous Malaysian dish composing of fresh vegetables, strips of fried egg and choice of marinated tofu (P520), chicken (P585), and prawns (P790).

These noodles are great for sharing and have a hint of spiciness—add a spritz of calamansi to elevate the flavors of the sweet-savory Asian sauce.

 

The Healthy Living Menu Key

Key

The Healthy Living Menu focuses on lean meats, good proteins, whole grains, healthy fats, fruit, vegetables, and low sugar cuisine. Items are conveniently marked with symbols to help you find the right meal for you.

Halloumi & Cherry Tomato Skewer (P400). Grilled halloumi cheese wrapped in kale leaves, skewered with cherry tomatoes, served with hummus.

If you haven’t had halloumi before, you’re in for a surprise! The grilled cheese squeaks as soon as you bite.

Mango and Chili Salad with Seared Tuna (P550). A mix of fresh mangoes, bell pepper, chilies & shallots, topped with sesame-crusted tuna.

The light searing of the tuna retains the fish’s buttery texture and subtle flavor, while the bold blend of sweet mango and chili provides a great contrast. Highly recommended!

Eggplant and Quinoa Gratin (P450). Eggplant and sundried tomato melt topped with mango salsa, feta, and yoghurt.

Even if this is on the “Lite Bites” section of the Healthy Living Menu, the serving size and sheer amount of Quinoa makes it a very filling lunch. We recommend this for a low-carb way to feel full.

 

DINNER (6PM-10PM)

By 6PM, Blue makes their Signature Dishes available. Food options revolve mostly on seafood, but pork and beef are also on the menu. Go for the All Day Dining if you don’t want seafood.

Citrus Marinated Kinilaw of Fresh Fish (P400). Filipino national dish of raw fish marinated in lemon, vinegar, and coconut milk.

Kinilaw is the local version of Ceviche, a dish popularized in South America. Try this appetizer with a good white wine!

Pistachio Encrusted Scallops (P500). On warm beetroot and apple salad.

The imported French scallops have a natural sweetness that is elevated by the pistachio and beetroot.

As much as Atmosphere wants to buy close to home, they also want to maintain their integrity as a restaurant—this can’t be done if dishes aren’t available due to lack of availability of ingredients. Importing is only done to ensure customer satisfaction.

Panfried Seabass (P1290). Spinach cream, prawns, sautéed quinoa, and bell pepper salsa. 

We really liked how the bell pepper salsa added a nice hint of smokiness to the dish.

Grilled Salmon (P400). Marinated in honey and mustard on wasabi and cucumber salad.

We loved this for its classic East Asian flavors of fish and horseradish—very reminiscent of Japanese cuisine.

Seafood Sampler (P1350). Tiger prawns, scallops, seabass fillet, truffle mash, zucchini, eggplant ragout, and saffron cream sauce.

The saffron cream sauce and eggplant ragout are not so overpowering that you can still taste the natural flavors of the seafood. Recommended if you don’t mind spending P1350 on a single dish.

Black Angus Steak Rib Eye (P1990). US Certified Prime Beef.

Best enjoyed medium rare, you have a choice of mash/fried potatoes, sautéed vegetables/spinach, or triple sec jus/port wine sauce with this beautiful slab of meat.

Black Angus Steak Fillet Mignon (P1500). With potato croquettes and bacon-wrapped beans.

This dish is like a slight revamp of your typical steak and potatoes. Different look, same great taste.

Vegetarian Lasagne (P650). Asparagus, artichokes, zucchini, homemade crispy pasta sheets, creamy saffron/spinach sauce, mango salsa.

The textural experience here is a treat. The soft artichokes and zucchini are a great contrast to the ultra crisp lasagna sheets. Eat this while it’s fresh!

 

DESSERT

Fresh Fruit Salad in Coconut Shell (P320).With strips of young coconut, raisins, tropical fruits, nuts, yoghurt, and honey on the side.

We loved how the natural sweetness of the seasonal fruit is enhanced by yoghurt and local honey. Great for sharing—until you realize you want it all for yourself!

Cassava Cake (P290). Cassava cake with vanilla sauce, ube ice cream, and leche flan turon.

Enjoy classic Filipino favorites all at once with a contemporary twist!

Malunggay Cake (P199). Made with local honey and toped with fresh fruit.

Cake and healthy don’t usually go in the same sentence, but that’s not the case with Blue’s Malunggay Cake.

Malunggay (Moringa Oleifera) grows abundantly in the Philippines and is even referred to as the “Miracle Tree”. Rich in vitamins, iron, and protein the humble Malunggay leaf is also used to treat inflammation and fungal disease.

Better Than Sex aka “BTS” Cake (P250). Molten chocolate topped with caramelized honeycomb.

This dessert is as sinful as it sounds.

 

THE BAR

The bar is one of highlights of the resort and holds Happy Hour every 5PM to 6PM. In that time span, you can buy two of the same drink for the price of one!

Nothing tastes more like paradise in glass. This cocktail is a sweet combination of creamy and refreshing.

This cocktail is quite thick and comes in mango, pineapple or banana.

Blue’s approach to dining is not only memorable for its fine selection of seafood and fresh produce, but also in the way it treats food. Learning about how much time, travel, and effort it takes for something as simple as a tomato to get to your table puts things into perspective. By thinking beyond the plate, we got a chance to respect the food and its origins.
