MALAGOS CHOCOLATE is one of my favorite Chocolate discoveries during the recent taste test. This is brought to us by the same Puentespina Family from Davao, also famous for their Malagos Cheese. The chocolate was highly rated by the US-based C-Spot objective chocolate rating site.
I personally like the 75% Dark Chocolate version while my wife likes the 85% Dark chocolate. Both were also available for taste test during the event. Their chocolate has balanced sweetness and is not too bitter.

The Story of MALAGOS 65% Dark Chocolate
Our cacao beans are from Trinitario (hybrid of Criollo and Forastero), considered the finest cocoa beans in the world. They are also of single origin, grown in one single area or region. Cacao beans sourced from only one particular region carry with them a more distinctive and pronounced taste. Artisan chocolate makers worldwide know the value of single-origin chocolate.
In addition to being a single-origin, ethically produced product, Malagos Chocolate is created using specialized equipment.
Malagos Chocolate uses a ball mill that can grind beans up to 25 microns, a quality often sought in the production of fine chocolates. Precision-controlled roasting makes sure the beans are heated to the correct temperature, preserving their aroma. The tempering machine used to mix Malagos Chocolate makes sure the temperature-sensitive chocolate mass is further improved with the process of proper tempering, rendering it smooth, with that desirable gloss and firm snap.

1. Malagos Premium Unsweetened Chocolate (100% pure chocolate). This is chocolate in its purest form (not compound as the cacao butter is still intact). Great for cocoa-based drinks and for baking, pastry & confectionery.
2. Malagos 65% Dark Chocolate (Bar – P130 – 100g). Excellent couverture for baking, pastry & confectionery and, of course, for eating.
3. Cocoa Nibs Php 350.00/kg
