CUISINIERS Pork Skewers: @Chowzter Asia’s Tastiest Regional Specialty! @MercatoCentrale

Filipinos love their barbecue. Taken as a snack or a main proponent of meals, barbecue is commonly found on the streets, restaurants and the dinner table. Chef Raymund Fabre and entrepreneur Raphy dela Cruz banked on that fact when they decided to open a booth at Mercato: Cuisiniers. They went on to develop succulent pork and chicken barbecue and eventually roast beef and sisig. 

Fabre and dela Cruz are big on taste. They came up with barbecue marinade that is not overwhelmingly sweet, which blends perfectly with the meaty flavor of pork and chicken. Cuisiniers’ barbecue attracts flocks of hungry folk, and people are known to order multiple servings of rice for good reason. It even won an award: Best Pork Skewers for Food Magazine’s Barbecue Cook Off competition.

In the Chowzter Asia 2015 Awards, it was recently recognized as the Tastiest Regional Specialty in Asia 🙂

Aside from the barbecue, Cuisiniers serves slow roast beef slathered with wine gravy. Its exterior has a delightful crisp, coupled with juicy strips of meat, while the gravy adds a bold flavor that leaves pleasant imprints on the tongue. The meat is so tender that one does not need to apply much pressure to slice it. Similar to the barbecue, the roast beef is a perfect match with white rice.

Completing the products served by Cuisiniers is dela Cruz’s own rendition of a popular local dish – crunchy pork sisig. Fans of spicy food would love the kick of pepper, which is fused with grilled minced pork. The dish is topped with crispy chicharon bits and cooked until the pork bears a nice brown sheen. To complete the gastronomic experience, diners often pair the sisig with two sticks of pork or chicken barbecue.

Cuisiniers’ owners have been in the food business since 2010 and have perfected the methods in preparing the barbecue and other grilled delights. They have joined various Mercato markets and have gained the distinction of being one of the more popular booths in the bazaars.  

Through skill and precision in cooking techniques, Cuisiniers have raised barbecue to an even higher pedestal for the hungry Filipino diner.
