The appetizer of poached and seared duck liver with arugula, smoked beet puree, parmesan tuile, and red onion marmalade will excite the palate, followed by a comforting bowl of creamy broth of mussels and leeks, with a healthy side of edamame and Akegai clam meuniere and micro salad.
For the entrée, you and your date will have a choice of slow-roasted Angus prime rib, roasted Chilean sea bass, or minute-marinated French duck breast – each served with sidings that best complement the central dish.
The decadent dinner gets a sweet finish with a dessert that delivers an exhilarating symphony of sweet, bitter, and tart flavors through the mixed berry chiboust, a quenelle of citrus-scented dark chocolate ganache, a sponge and coulis duo of strawberry, 70% Guanaja Valrhona gelato, chocolate soil, and meringue.
