KAM’S ROAST PH: Secret Menu – Pei Pa Duck!

Kam’s Roast Ph has a secret menu! It’s Pei Pa Duck marinated with 25-year aged orange peel, then butterflied and bathed in oil. The result? An extremely super crispy skin, with meat juicy and tender with fat, that’s bursting with flavor!

Kam’s Roast is an internationally-acclaimed and Michelin-starred restaurant in Hong Kong popular for their HK roasts. In Hong Kong, Kam’s roast is best known for their goose, but given the constraints of importation of poultry from China, Kam’s Roast Ph serves something close to roast duck, which is just as flavorful and succulent, especially when it comes with my favorite plum sauce.

Foodee Global Concepts, the group behind Tim Ho Wan, Tsuta Japanese Soba Noodle, and Todd English Food Hall is responsible for bringing the famous roasts to Manila.

Pei Pa Duck (Php 3300/whole, Php 1800/half)

The owners of Kam’s felt that the art of cooking pei pa duck was something lost in time and that no one in the Philippines has done it yet.

Pei Pa Duck derives its name from a Chinese musical instrument similar to a violin that is called Pipa. The duck is usually prepared spread out like the pei pa.

The marination is different from the roast duck, as they use a Chinese treasured ingredient, a 25-year old aged orange peel, which is very expensive.

Similar to how you would prepare a roast duck, but more time consuming just because of the process. Like how you butterfly the chicken, you butterfly the duck by flattening it, to get the crispyness that you want.

It is roasted first, then bathe in oil (not deep fried). It is literally standing up, and showered in oil (that’s the tedious part).

Apparently in HK roast duck is not meant to be crispy, but some other roasts duck places are serving it crispy just the way I like it.

Overall, I love Kam’s Roast Ph Pei Pa Duck in their secret menu. I’m a fan of eating crispy skin, and it even gets better when it’s complemented with meat that’s bursting with flavor. It’s a win for me! The duck comes with hoisin sauce, but I love eating it as is. I also ordered plum sauce when I got “umay” at the end since we ended up ordering more than we could consume.

Make sure to order ahead, since they only prepare two a day. You can also find the goose in their secret menu when if you book a private room or book in advance!
