The Cellar is Grand Hyatt’s hotel bar featuring Spanish small plates and tapas with a premium wine selection, handcrafted beer and specialized cocktails.
The private rooms are quite dramatic, with the main dining area featuring an open kitchen where the chefs prepare more than 100-year-old recipes from an old Spanish restaurant in Manila.
We ordered The Cellar’s best dishes and here are our favorites…

First on the menu are the drinks followed by a well-curated selection of Spanish meats and tapas favorites.
Charcuterie and Small Plates

One of the best croquetas in town—pillow-soft on the inside with a nice crunch on the outside.

This is not your usual salad. Best to mix the blue cheese and poached pear to provide a sweet cheesy flavor to the vegetables.

Start with a nice glass of gin and tonic to stimulate the appetite and to get you into a romantic mood.

Get a slice of the mushroom with a bit of the melted raclette while it’s still hot and a piece of the potato rosti for the crunch.

I liked slicing the chorizo into circular pieces and savoring each piece slowly and eating it with a rich stew of fabada topped with cute little quail eggs.

A whole chunk of camembert baked and served melted. Best eaten with bread, a bit of walnut to cut through the flavor, then fig for texture and honey for sweetness. The best!
Flat Grill

The sea bass was cooked just right, not overcooked with a nice seared skin and served on a bed of mussels, clams, tomato flavors and puree of capers mixed with raisin for contrast.

Big plump and juicy scallops with a big slice of mushroom, onion leeks and eggplant in pureed form.

You can really taste the flavor of the beef, cooked medium with a nice sear, and you have the option to eat it with mushroom, egg yolk or mayo egg sauce.

Get a nice bottle of tempranillo to pair with the steak and complete the Spanish dining experience.

Lamb ribs with a nutty crust of pistachio on a bed of tomato yogurt sauce. Our favorite!
Oven

Spanish paella with a thin layer of rice and socarrat and generous toppings of shrimp, clams, mussels and chicken and finished with a touch of lemon.

Spanish version of baby lechon with golden brown crispy skin and juicy pork meat. So good!
Rotisserie

A porchetta Spanish style version with juicy layer of pork belly fat, chicharon skin and tender flavored meat. Irresistible!
This is the type of good quality food you just want to eat over wine or beer and all-night conversations with friends and family.
Dessert

Sandwich version of profiterole ice cream with chocolate sauce.

A satisfying dessert for choco lovers.

Spanish-style baked custard with sweet caramel sauce.

Pavlova with whipped cream, strawberry sauce and a kick of Grand Marnier. My kind of dessert. 🙂
Final Thoughts
Overall, this is a fine place to enjoy good quality drinks and food served on small plates/tapas in a romantic hotel bar setting.
All the food we ordered were quite good and our favorites were: Baked Camembert and Jamon Iberico and Cheese Croqueta to start with, Slow-cooked Lamb Ribs and Pork Belly for the main dish and Strawberry Pavlova for dessert. Budget about ₱2,500/head for food and drinks.
This is a great place to celebrate a special occasion with friends and family who appreciate good wine and good Spanish food. Don’t forget to reserve the private room.

P.S. It can be intimidating at first because of the dramatic character of the cellar rooms, but you can come in casual chic attire and the setting is not too stiff.
