Verona Brunch Club (VBC) is the signature Sunday brunch of Ristorante di Verona at Swissôtel Clark. It features free-flowing food, alcoholic, and non-alcoholic beverages. The food is presented as an order-all-you-can curated à la carte menu (not a buffet) so that the food is fresh upon order. The drinks are served on tableside carts, accompanied by DJ beats in the background.

RISTORANTE DI VERONA

Ristorante di Verona is a fine-dining Italian restaurant inspired by the setting of Shakespeare’s “Romeo and Juliet”. Chefs select fresh ingredients to bring the flavors of Italy to your plate.

It is located on the 5th floor and offers both air-conditioned indoor and al fresco dining overlooking the pool.

Sunday Brunch has a fun and relaxed dining theme, so you can dress in smart casual or even day pool party style.

We ordered all the items on the menu, but we will only feature our favorites that are worth the calories.


VERONA BRUNCH CLUB

OYSTER BAR. 3 ways Oysters (Fresh, Rockefeller, Baked Cheese)
Served with mignonette, lemon wedge, caper flower, cocktail onion, cocktail sauce

Eating enough Fine de Claire oysters would make the meal worth it.

We like to order them fresh so we can really taste the oyster and the briny flavors of the sea. The baked oysters and Rockefeller style are also good, and they are served in sets of three, so order as many as you can!

Aperol Spritz is an Italian aperitif typically made with equal parts prosecco, Aperol, and soda water. However, you can adjust the ratio to your liking. I would prefer the prosecco as is as a bubbly to start the meal.

BUTTER WAFFLE with double-dipped chicken, spinach, carrots and chili honey.

I prefer the waffle over the pancakes. I love the crunch of the chicken with a bit of chili honey. It is well-presented and a good palate teaser that you can share.

EGGS BENEDICT with smoked salmon.

I love how the runny egg yolk oozes when you slice into it, and it pairs perfectly with the smoked salmon and a bit of bread. I prefer this to the usual omelette options.

SALAD. Caesar Salad

The salads are a good and healthier option to balance out the brunch feast.

SOUP. Mushroom Soup

The mushroom soup has a rich, earthy flavor and a velvety smooth texture that will delight your palate.

CHEESE BOARD. Grana Padano, pecorino sardo, sweet gorgonzola, taleggio

A cheese board is a better choice than a charcuterie board for pica pica over good conversation and alcoholic drinks.

I personally love gin and tonic because it has less sugar and the right amount of alcohol. Experiment with their different infused gins and find your perfect G&T.

APPETIZER. Beef Carpaccio crepe, with crispy parmesan, cheese, arugula, pine nuts, cocktail sauce and balsamic lemon reduction.

Surprisingly good thinly sliced raw beef is best enjoyed with a bit of cheese, arugula, crispy Parmesan shavings, and nuts.

PASTA. Beef Lasagna

We tried all the different pasta dishes, but their baked lasagna was the best. It had the right amount of cheesiness, beef bits, and good pasta sheets.

COD FISH with spiced chickpea.

I enjoy the cod fish fillet itself and don’t mind the chickpeas underneath.

PAN-SEARED SALMON FILLET, star anise beurre blanc sauce.

The salmon was cooked to perfection, medium rare with a crispy skin. It was so juicy and flavorful, even with the sauce.

COLLE CORVIANO Pinot Grigio

Colle Corviano Pinot Grigio is a dry white wine from the Abruzzo region of Italy made from 100% Pinot Grigio grapes. It has a fruity aroma, a dry mouthfeel, and a medium body. It pairs well with seafood and salads.

PORCHETTA served with marble potato, carrots and green peas cream

The meat was flavorful on its own, and the green pea cream sauce only enhanced its deliciousness. I recommend cutting it into pieces and requesting that the sauce be served on the side.

I like the light balisong steak knives and the heavy steak knives on the right end.

BEEF TENDERLOIN served with hasselback truffle potato, carrot, asparagus and red wine reduction sauce.

The steak course was one of the highlights of the meal, but the cut was a bit plain, dry and lacked any interesting fat marbling.

COLLE CORVIANO Montepulciano D’ Abruzzo Doc

The Colle Corviano Montepulciano d’Abruzzo DOC is a dry red wine from the Abruzzo region of Italy made from 100% Montepulciano grapes. It has a nose of ripe red fruits, with hints of spice and vanilla. The palate is rich and fruity, with a smooth texture and a long finish. It pairs well with porchetta, steak, and other grilled meats.

Order one of each dessert to experience different textures and enjoy a satisfying cheesy or chocolatey finish.

CANDIED BANANA MILLE FUILLE

This is our favorite dessert, and the best way to enjoy it is to crack the crispy layers and mix them with banana and cream.


FINAL THOUGHTS

Overall, this is indeed one of the best Sunday brunch experiences in Clark. I highly recommend it for a destination celebration with family or a memorable reunion with friends over wine. Choose wisely from the menu so you don’t waste calories on the pizza or pasta. Pace yourself with the free-flowing wine, or customize your wine pairing to your liking. And don’t forget to use the soup to refresh your palate between courses!

I love the interactive wine carts. I think they should do the same for the dishes. Most of the food is cooked in the kitchen and just served in a small plate. They could have an oyster shucking station or have servers bring served portions of the family-style main dishes to the table. I also wish they had gelato for dessert.
