What makes this ramen different? That clear dashi broth — malinamnam, layered, and deeply comforting without the heavy, milky pork intensity. Made from seafood and chicken, it feels lighter yet still packed with umami.

Best enjoyed with a splash of vinegar to open up the flavors and add another layer to the experience.

(Note: This doesn’t work as well with the Yuzu ramen 🍋 since it already has enough acidity.)

FINAL THOUGHTS

Overall, we loved it. Manila has long been dominated by rich pork-based ramen, and now both Gen X and Gen Z are seeking lighter, healthier options. It reminds me of Tsuta Ramen by the Foodee Group, which may have been ahead of its time during the early ramen craze in Manila. The Dashi Ramen is excellent as is, while the chili version is enjoyable if you like it hot. I wasn’t a fan of the yuzu ramens, but a dash of vinegar adds a nice touch. We’ll definitely go back for the Chashu Ramen Bowl with spicy karaage — sarap nito! 🍜🔥
