THE BOWERY is Chef Cuit Kaufman’s American Bistro Pub concept, which serves fine New York Comfort Food inspired by the chic Bowery Street in New York. It’s a “Higher-end Borough” that aims to answer the need of foodies for better quality food in Manila. It’s also a great venue to hold meetings during the off-peak hours.

THE BOWERY is located near the Burgos Area in Bonifacio Global City, in the former location of Basilio’s.

Most of the items on the menu look very enticing, but the drink list still needs to be developed some more.
Had a great chat with Chef Cuit (together with blogger friend, Pao Nazario) about his restaurants’ evolution and the story behind Bowery.
I love the floor to ceiling windows with a view of Mind Museum and the streets outside.
The second floor is also a great spot for meet-ups. Here I am with my blogger friend Carlo Lorenzo of Crispy Pata at Kare Kare with Einj Santos.
The second floor transforms into a busy bar area at night…
…with an al fresco veranda overlooking the street that becomes a smoking section from 10pm onwards.
Cucumber Smash (P220 +10% service charge).
A refreshing starter made from cucumber, vodka, and a bit of soda.
✮ LOBSTER SHRIMP TRUFFLE MAC AND CHEESE (P1,200 +10% service charge). Creame Fraiche, Cream Cheese, Cracked Black Pepper, Garlic, Mozzarella, Truffle Oil.
I had second thoughts ordering this since it costs P1,200+, but most foodies who’ve tried it have raved about it.
I love its rich cheesy flavor, with a generous amount of truffle oil and big chunks of lobster and shrimp in a big serving size. Very good indeed, especially when hot. This definitely did not disappoint.
LINGUINI WITH MUSSELS AND CLAMS (P380 +10% service charge). White Wine, Roasted Tomatoes, Garlic, Chiles, Extra Virgin Olive Oil.
Served in a bowl with good portions of mussels and clam, mixed with garlic, olive oil, and white wine for flavor.
BOWERY BURGER (P860 +10% service charge). Kitayama Wagyu Blend 6 Oz All Beef Patty, Cooked Medium Rare, Aged Cheddar Cheese, Vine Ripened Tomato, Pickled Red Onion, Brioche Bun, Sweet Potato or French Fries.
The burgers are always good at Chef Cuit’s restaurants. This comes with a thick, all-beef wagyu patty and generous toppings.
“For the main dish, I had the Bowery Burger. It’s beef patty is made of Kitayama wagyu blend. It’s supposed to taste like steak in burger form. I had the mistake of ordering this medium well, so it turned out a bit dry, but tasty nonetheless. ✮ SHORT RIB GRILLED CHEESE (P420 +10% service charge). Braised Beef, Yellow Cheddar Cheese, Monterey Jack, Caramelized Onions, on Sourdough Bread. Served with Honey Mustard and Potato Chips.
Really good grilled cheese with very tender short rib beef, melted cheddar cheese, Monterey Jack, and sweet caramelized onions. The serving size was so big that I could only finish one slice and had to bring the second slice home.
The servers are very pleasant and try to ensure they give you the best dining experience.
✮ BUTTERMILK FRIED CHICKEN AND WAFFLES (P610 +10% service charge). Sage White Gravy, Pure Maple Syrup.
The chicken was crispy fried on the outside but very juicy on the inside. The waffle though was already swimming in the pure maple syrup, which is good, but you might want to have it on the side.
What makes this chicken awesome is the creamy sage white gravy sauce. 🙂
✮ SKILLET CHOCOLATE CHIP COOKIE SUNDAE (P350 +10% service charge). Freshly Baked Cookie, Vanilla Ice Cream, Hot Fudge Sauce, Whip Cream, Wet Nuts.
Their dessert line-up is very rich but also very good. We ordered this freshly baked cookie sundae. Make sure you ask for the cookie to be served medium so you have a soft chewy inside and a crunchy outside. It’s hard to resist this. 🙂
The Bowery is another winning concept from the ChefCuit Kaufman group of restaurants. 🙂
A feel-good resto, you come here to celebrate or if you just want to truly enjoy good food with good foodie company. This should also be an awesome dessert place, especially when they go 24×7 soon.
I recommend the Lobster Shrimp Truffle Mac and Cheese, Short Rib Grilled Cheese, Buttermilk Fried Chicken and Waffles, and Skillet Chocolate Chip Cookie Sundae. Budget P1,000/head.

Hi, Anton how are you? Thanks for sharing this one. The ambiance of the restaurant is good as well as its location. Right now, Taguig is considered as a 2nd Makati. The dishes that you posted are really cooked in American way. Nakakagutom. I like a steak (any kind) cooked in medium rare with A1 Steak Sauce. This restaurant is similar to Applebee, Denny’s, Red Lobster, and Olive Garden (with Italian twist). Have a nice day always.
