ONE WAY Bakery and Restaurant specializes in sourdough breads and pizzas and European comfort food. This is a dream-come-true restaurant of Consul Joseph Assad of Lebanon (known online as Surfer Joe) together with his distinguished friends Louie Ysmael, Dave Vaughn, Ralph Joseph, and Fernando Ortigas.
We had a meeting with our business partners here, check out what we like…

It’s located at the corner of one-way streets Salcedo and Benavidez in Legaspi Village, which inspired the name.
The ambiance is black and white, consistent with the one way color scheme.
They are famous for their sourdough breads, which are popularly used in Arabic dishes. Sourdough has a mild bitter after taste.
Chef Partner Harold Nilooban is the secret behind the yumminess of the resto’s European cuisine. He was the chef responsible for the successful launch of Savoy Bistro, and recently, Maria Luisa’s Garden Room.

APPETIZERS
Baked Escargot Bourguignon. 1/2 Dozen, Garlic Butter, Fleur de Sole.
The snails tasted fresh. It’s best to suck straight from the shell with the garlic butter sauce.
Chef’s Pate’ Platter (P690). Chicken Liver & Pork terrin served with Cranberry Jam & Sourdough Bread.
This was the perfect topping for the sourdough bread, with creamy liver and pork taste, balanced with the sweetness of the cranberry.
✮ Chilean Black Mussel in White Wine & Cream (P460). Served with multigrain sourdough bread.
Love the mussel taste, with the creamy white wine sauce, which is similar to Champêtre‘s version but at a relatively lower price.
SOURDOUGH PIZZA & PASTAS
I love their signature sourdough pizza because it uses the same sourdough used in their bread. It makes it crunchier, and you’ll enjoy eating the crust of the pizza then the toppings. You can hold the pizza on one end, and the pizza stays straight, supporting the toppings.
✮ PAMPLONA (P470). Jamon Serrano, Spanish spicy Chorizo, Arugula, Cherry Tomato & Lemon dressing.
This is my favorite combination because of the thin slices of flavorful meat from the Jamon Serrano and Chorizo, balanced with the bitterness of the arugula and the sweet juiciness of the tomato.
VEGETARIAN (P340). Portabello mushroom, Spinach, & Onion.
This is a good option for healthy eaters and vegetarians.
CARBONARA (P470). Mushroom, Bacon, White wine, & Cream sauce.
The kids love this pizza because of the familiar taste of cream sauce, with bacon and mushroom.
✮ GORGONZOLA (P380). Served with sourdough tomato brochetta.
Love the richness of the cheesy sauce, which is balanced by the saltiness of the meat. It’s best eaten with a bite of the sourdough bread with tomato salsa.
✮ PAMPLONA (P270). Served with Spanish spicy Chorizo.
If you like a red tomato sauce flavor, try this pasta with spicy chorizo.
Jackie Chan, their sourdough expert and consultant, showed me the live sourdough yeast cultivated and fermented naturally, which gives the sour aftertaste from the lactic acid of the lactobacilli.
SOUPS & SALADS
SALMON GRAVLAX & MANGO SALAD (P280). Mixed Lettuce, Salmon Gravlax, Mango, & Mustard Dressing.
This is a classic combination of fresh greens with mango, salmon, and creamy mustard dressing.
GARDEN SALAD (P160). Mixed lettuce, Watermelon, Grapes, Sundried tomato, Walnuts, Citrus dressing.
This salad is more refreshing with the watermelon, citrus, and walnuts. It’s good value for money.
✮ CREAM OF WILD MUSHROOM SOUP (P180). In Herb Toast.
One of the best mushroom soups we’ve tasted and is best paired with its sourdough bowl. 🙂
Cream of Tomato Soup (P130). In Herb Toast.
You can also order their tomato soup version, which is very creamy.
BURGER & SANDWICHES
Another secret behind the yummy food in One Way resto is Pastry Chef Maricel, who creates the sourdough and the different sandwiches.
SHRIMP COCKTAIL (P190). Served with soft boiled egg, dill, horseraddish sauce, cream sauce.
It’s like an overloaded shrimp bruschetta pica-pica. A bit expensive for the serving size.
✮ CLASSIC AMERICAN BURGER (P440). Quarter pounder, served with Cheddar cheese, Mushroom, Bacon.
I love this bacon mushroom quarter pounder using their sourdough bun with crunchy and yummy fries 🙂
It’s recommended to press the burger down so that the juices of the burger, bacon, mushroom, and cheese are absorbed into the bun.
MAIN COURSE
✮ COQ AU VIN (P280). Served with Pilaf Rice.
Love this classic French chicken dish with wine sauce. Very good value for money. 🙂
TASMANIAN SALMON FILLET (P790). Onion Leek White truffle sauce & Spinach Risotto.
The salmon was very good, still juicy, and with a nice grilled flavor. The white truffle sauce was too rich with the risotto — nakakaumay at some point.
DUCK CONFIT (P960). Served with Home Fried Potato, Garlic Portwine and Cranberry Sauce.
AUSTRALIAN ROASTED RACK OF LAMB (P1,680). Served with Sharp Cheddar Mashed Potato & Mint Sauce.
The lamb meat was good with no funny aftertaste and with the brown sauce.
RIBEYE STEAK (P1,900). 500g (17 oz) served with Cafe de Paris Butter.
The steak was good too, cooked medium and best shared with 3-4 people.
✮ TOURNEDOS ROSSINI (P1,850). The King of Steaks topped with Pan Fried Duck Foie Gras & Black Truffle Sauce.
If you like steak, best to order this classic French steak topped with a creamy foie gras and black truffle sauce. Best to eat with the mashed potato and big enough to share with 3-4 people.
US BRAISED OXTAIL (P890). 3 hours braised in Red Wine, served with Portabello Mushroom.
Very soft and juicy meat, which absorbed the flavor of the red wine sauce.
DESSERT
For dessert, order the Mango Jubilee, which is cooked table-side with a little flair.
✮ MANGO JUBILEE (P180). Mango, Orange, & Rum, fresh fruit & cream.
This is crepe topped with mango with a sweet orange & rum sauce topped with cream.
CREME BRULEE (P150). Served with fresh fruit & cream.
This was just OK. Best to order the other crepe flavors.
Consul Joe showing to the boys his plan to decorate the entire function room with portraits of friends, family, and people he’s met in the restaurant.
Congratulations to Consul Joe and Louie Ysmael for the yummy and good value One Way restaurant!
Go here for the soughdough breads, pizzas, burgers, and yummy European comfort food favorites.
The ambiance is more of a neighborhood bistro with a black and white motif and an oldie classic feel.
I would recommend the following dishes with good value for your money:
Appetizers: Chilean Black Mussel in White Wine & Cream
Soup: Cream of Wild Mushroom Soup
Salad: Garden Salad
Pizza: Pamplona Pizza
Pasta: Gorgonzola Pasta
Burger: Classic American Burger with Sourdough Bun
Main Dishes: Coq Au Vin and Tournedos Rossini
Dessert: Mango Jubilee Crepe
Budget P500-P800/head, depending on whether you’ll get the main dishes or not.
I heard some people are addicted to and keep coming back for their sourdough breads.
