The 30th Negros Trade Fair features the best of Negros Island on September 16-20, 2015 at the Glorietta Activity Center.

With the theme “Truly Negros”, the 30th Negros Trade Fair will feature over 80 selling booths that will show the creativity, skills and entrepreneurial spirit of small and medium enterprises.

1. Namit! Find your favorite Ilonggo Cuisines and Delicacies!

Eat authentic Bacolod Chicken Inasal.

Inasal is marinated with a unique blend of suka or kalamnsi, garlic, achuete, lemongrass and sometimes soy sauce or salt. Then grilled over a charcoal pit, giving it a smoky flavor.

The best way to eat inasal is to dribble your rice with achuete/chicken oil. Be sure to try it with the local vinegar called langgaw. 🙂

Beef Cansi with bone marrow is slightly similar to the bulao in Luzon and pochero in Cebu. The broth is slowly cooked for hours in wood fire stoves until the cartilage and bones fall off, then flavored with batuan, achuete and chillies.

The batuan gives the dish that subtle sour taste simillar to sinigang. 🙂

The winner for us is the buko pie made from young coconut flesh. Layers of soft coconut flesh stacked together and baked between a thin layer of crust. A definite must try! 🙂
