“La Comida Mexicana”, a Mexican food festival at Diamond Hotel Philippines is a celebration of the rich flavors that Mexico has to offer. Running from the 16th of September to the 20th, you can eat your heart out during lunch or dinner at the Corniche. In line with Mexico’s National Day, Diamond Hotel Philippines flew in Mexican chef, Daniela Romero, who prepared more than 30 dishes from her homeland!
Chef Daniela is from Sonora, Mexico and has a Bachelors Degree in Culinary Businesses from Universidad del Valle de México. From 2012 to date, she has become the owner of 3 Mexican restaurants called “Las Chulas Restaurantes”. Before that, she has worked with Crowne Plaza Guadalajara Hotel and Ace Adventure Resort in West Virginia.
For 2,550 per head, Team OAP got to try out authentic Mexican favorites like Fajitas, Burritos, Beef Carni, and Enchiladas, among other things.
Here are a few of the dishes Mexican food lovers would enjoy:
Quesadillas are very popular and that is not without reason! These bad boys, when made fresh, are delightfully crisp on the outside, but soft and warm on the inside. The cheeses used in Chef Daniela’s recipe remains a mystery, but we’re guessing it’s Monterey Jack and Cheddar.
The Queso Fundido is a flambéed dish of melted cheeses, chilies, and sautéed mushrooms. The native chorizo wasn’t too salty and complimented the rest of the ingredients. This dish felt more like a comfort food than an appetizer!
The pork flautas get their name from the fact that they look like flutes. These are crisp-fried tortilla wraps with meat fillings. They’re often topped with different condiments like sour cream, guacamole or salsa.
Sautéed Shrimp in Chipotle Sauce, the taste was simple and subtle. The shrimp went really well with the tortilla-based dishes.
The ice cream at La Comida Mexicana came in a couple of decadent flavors. Try the limited Piña Colada and Sweet Corn available only during the food fest. They were served on a handmade waffle cone or bowl.
Diamond hotel is well known for their desserts, it was definitely a great finish to our night of eating.

Fish fillets with olive oil, olives, tomato, onion, garlic, chile guero, green peppers, capers, laurel, thyme, salt, and pepper.
The tortilla soup can be mixed with add-ons like tortilla strips, cilantro, guacamole, sour cream and cheese. This comfort food goes very well with the Beef Carni, which is basically Chili Con Carne. It tastes great when you pair it with the Tortilla Soup and Pulled Pork Taquitos.
The team came across these concoctions and was instantly curious.
The “salad” section consists of Beef & Spicy Tomato, Pollo con Mole, Roasted Corn & Ensalada.
We can’t celebrate Mexican food without burritos. The event offers a variety of Wet/Dry Burritos and Fajitas.
While we were dining, Diamond Hotel invited Mexican Mariachi Group, Achai to come play. The band was entertaining and was pleasant to listen to. They truly added to the experience of eating authentic Mexican food. Achai was definitely one of the highlights of the night.
